Fried Egg Breakfast Bagels

Try this egg and bagel sandwich for a quick weekday breakfast that can be taken on-the-go!

  • 2 bagels
  • ¼ cup ( 60 mL ) spreadable goat cheese
  • ½ cup ( 125 mL ) baby spinach
  • 4 tomato slices
  • 2 eggs
  • Pinch salt, fresh cracked pepper


  1. Toast split bagel halves.
  2. Spread goat cheese over the bottom halves of each bagel.
  3. Top each with spinach and tomatoes
  4. Cook eggs in a non-stick skillet until desired doneness and arrange over tomatoes. Sprinkle with salt and pepper and top with remaining bagel halves to make sandwiches.
