Curried Egg Salad Sandwich on Challah Bread

This delicious egg salad is mixed with curry spices topped on soft challah bread (egg bread). A flavorful spin on a classic.

Ingredients

  • 4 tbsp ( 60 mL ) mayonnaise
  • ½ tsp ( 2.5 mL ) curry powder
  • 1/8 tsp ( 0.5 mL ) salt, or to taste
  • 1 green chiles, finely chopped
  • 3 hard boiled eggs, diced
  • 4 slices challah bread (egg bread)
  • 2 romaine lettuce leaves

Instructions

  1. In a medium bowl, combine 2 tbsp (30 mL) mayonnaise, curry powder, salt, and green chiles. Gently fold in hard boiled eggs and stir to combine. Add additional mayonnaise if you prefer a creamier mixture.

  2. Place slices of bread in pairs on a work surface. Lightly spread remaining mayonnaise over the bread. Place lettuce on one slice of bread in each pair.

  3. Place half of the egg salad mixture over each lettuce-lined slice of bread, spreading evenly. Top with the remaining bread.
