Masala Fried Eggs

These delicious spiced eggs are an easy, quick meal for one, but can be scaled up to suit a larger group as well.

Ingredients

  • 1 1/2 tbsp ( 25 mL ) vegetable oil
  • 3 tbsp ( 45 mL ) diced onions
  • 6 to 8 curry leaves (optional)
  • 1 to 2 cloves garlic, minced
  • 2 tomatoes, diced
  • ¼ tsp ( 1.25 mL ) salt
  • ½ tsp ( 2.5 mL ) cayenne
  • ½ tsp ( 2.5 mL ) ground coriander
  • Pinch turmeric
  • 2 eggs
  • Salt, to taste
  • Cilantro and green chilies, for garnish

Instructions

  1. Heat oil in a frying pan over medium-high heat. Add the onions and curry leaves (if using). Sauté until the edges of the onions turn golden brown.

  2. Add the garlic, tomatoes, salt, cayenne, coriander, and turmeric to the pan. Continue to cook over medium heat until any liquid mostly evaporates and the spice paste gets a sheen on top. 

  3. Use your cooking utensil to make two wells in the mixture. Crack an egg into each well. Cover the pan and cook on low for 1 to 3 minutes until the eggs are cooked as desired.

  4. Season with additional salt, if desired. Garnish with cilantro and green chilies. Serve hot with toast or a paratha, if desired.
