Cheesy Frittata
This cheesy frittata is perfect for the whole family. The recipe base is safe for babies starting solid foods after they have been exposed to plain eggs for at least a few weeks and has suggested variations for different stages.

Ingredients
- 8 eggs
- 1 cup ( 250 mL ) cooked cubed sweet potatoes
- ½ cup ( 125 mL ) shredded cheddar cheese
Instructions

Preheat oven to 350°F (180°C).

In a large bowl, whisk together eggs until blended. Add sweet potato and cheese and stir to combine.

Pour egg mixture into a greased 9-inch (23 cm) round baking dish. Bake, uncovered, until a knife inserted into the center comes out clean, 30 to 40 minutes.

Let stand for 10 minutes before cutting.
Notes
For adults and older children:
Serve with sliced avocado, sliced tomato, pico de gallo, crispy tortilla strips, sour cream or hot sauce (optional).
For baby led weaning:
Once your baby starts to grab, you can try offering a wedge of frittata that they can pick up along with one slice of avocado, and one slice of tomato.
Finger foods:
Once your baby gains dexterity and develops a pincer grasp, you can try chopping the frittata into bite sized pieces and serve with bite sized pieces of avocado and tomato on the side.
